Since Thanksgiving I've been saving the leftover turkey carcase to cook something with, and yesterday I decided to go with gumbo. I'd never made it before, so it was a little daunting, but it came together ok. It's not really that hard, but it took the better part of the day...about 6 hours all told. I was a little worried towards the end because it didn't seem to have a lot of flavor, but once it had a chance to settle a bit it was very tasty.
It was an expensive meal, but it made a ton of food. I fed 8 people and I still have about half of it left.
